CAULIFLOWER ALMOND BAKED PATTY’S


Whether you love vegetables, or feel you would like to add more vegetables to your lifestyle but not sure how to. Let me show you one simple example of how you can sneak those beauties into your lifestyle. ۵






You can make this cauliflower patty’s by pulsing cauliflower florets in a food processor until they’ve broken down into tiny grain-like granules.


Eaten raw, the grains are tender but crunchy with a mild flavor. Raw cauliflower couscous can be used like cooked grains in salads like healthy salads with turmeric lemon dressing (see my other recipes)


Cauliflower is high in fiber, which is important for our digestive health. It is also high in antioxidants, fighting off inflammation, the water content in cauliflower is also dense, along with its lower calorie content it can often be ideal for those who would like to have less grains (refined carbs) & more vegetables.

Choline is a much needed mineral that is also present within the Cauliflower.





CAULIFLOWER ALMOND BAKED PATTY’S


INGREDIENTS


  • 1 Large head cauliflower, cut into florets

  • 1/2 Cup Almond Pulp made with my nut milk bag

  • 2 large eggs, lightly beaten or flaxseed egg (see recipe)

  • 1 cloves garlic, minced

  • 1 Tablespoons minced scallions,

  • 1/3 Cup Psyllium Husk

  • 5 fresh basil leaves

  • Pepper

  • 5 Sun dried tomatoes slightly softened then drained from liquid before using

  • Extra Virgin Olive oil or coconut oil


DRESSING


Pre-soaked Cashew & Macadamia nuts. Once soaked, allow to blend adding a squeeze of fresh lemon, as well as nutritional yeast.


INSTRUCTIONS


Place the cauliflower florets into a little boiling water for 10 min to lightly soften, once done, remove and strain the water. Allow to cool slightly whilst you get the other ingredients together, the main kitchen tool you need is your food processor.


Once you have everything, you place the cauliflower florets into your food processor, then add your almond pulp, garlic, basil & scallions, along with your EVOO and pre-soaked sun dried tomatoes. Blend well until a very fine consistency smaller than a rice grain. Once done then allow to remove and add to a large mixing bowl. Then mix in the, psyllium husk, “vegan egg” or alternatively you can use eggs.
