LIME AND CHILLI GRILLED VEGETABLE BEAN DISH


Servings: 2


INGREDIENTS


  • 500g Black beans and chickpeas, soaked and cooked 1 Zucchini

  • 2 Stalks of celery chopped

  • 1 Sliced yellow squash

  • 1/2 Sliced red bell pepper

  • 1/2 Sliced yellow pepper

  • 1/2 Sliced red onion

  • 3 Tablespoons of balsamic vinegar

  • 3 Tablespoons of olive oil

  • 1 Teaspoon of yacon syrup

  • 1 Squeeze Lime

  • 1 Tablespoon of chopped fresh basil

  • 1 Tablespoon of chopped fresh coriander

  • Kosher salt and fresh cracked pepper to taste


Final toppings:

  • 1/2 Avocado

  • Chopped fresh parsley

  • Lemon

After the vegetables have been grilled, add your avocado, Lemon juice, fresh parsley.


INSTRUCTIONS


Place the zucchini, squash, peppers and onion in a bowl and coat them with 2 tablespoons of olive oil and season with salt and pepper.Next, LIGHLY Grill the rest of the ingredients, either in a hot pan or in the oven.Chill the vegetables as soon as they are cooked.Once the vegetables are chilled, dice them up and them to a bowl along with the beans and chickpeas, balsamic vinegar, remaining olive oil, yacon, basil, coriander, salt and pepper. Lightly chill again before serving.
