COOKIE CRUMBLE BERRY “ICE-CREAM”
Servings: 1 Serving size of a small ice-cream tub (Use your bread mould)
2 Ripe bananas
1 Cup frozen blueberries
1 Cup frozen chopped strawberries
1/4 Cup coconut milk
1/2 Cup coconut cream (fresh flesh creamed)
1 Cup pre-soaked cashew or even better hempseeds
2 Tablespoons of MCT Oil
1 Tablespoon Yacon Syrup
1 Vanilla bean pod
6 Pieces of @yogasuperfuel cacao cookies
1 Tablespoon of cacao nibs
In a food processor blend all the ingredients, apart from the cookies and cacao nibs.
Once blended, then break the cookies into crumbles, gently add to the mix along with cacao nibs and mix gradually.
Spread the mix into your bread mould. Cover and let freeze for 2 hours then remove from freezer and serve by scooping out with your ice-cream scoop.
Finally sprinkle some more cookie crumbles.
