EASY PEASY BREAKFAST MUFFIN

INGREDIENTS:

1/2 Cup of coconut flour

2 Tablespoons of chai seeds

2 Tablespoons of quinoa or almond flour

1/2 Cup of Quinoa flakes

1/3 Cup of Gluten-free oats

1 Tablespoon of chopped raw nuts (or seeds)

1 Tablespoon of bran flakes ** optional

2 Tablespoons of coconut flakes

1 Sachet of Kids Good Stuff Chocolate

1 Egg or 2 Flaxseed eggs

1/3 Cup of Nut milk

1/3 Sliced Banana

2 Large sliced (chopped dates)

INSTRUCTIONS:


Mix all the ingredients together until dough consistency.

Once mixed, either scoop out into three med muffin moulds and bake for 15min at 170 degrees Celsius or microwave for 3 minutes at high heat.

Allow too cool before cutting it.


Spread with your favourite spread, or make my health nut butter.

HEALTH NUT BUTTER:


INGREDIENTS:

3 Tablespoons of Raw almond butter

2 Teaspoons of Nuzest Kids good Stuff chocolate

1 Teaspoon of cacao nibs

1 Tablespoon of chopped nuts

INSTRUCTIONS:


Mix the above and spread, top with banana slices. Keep extra in the fridge in your glass jar.
