These grain-free paleo waffles are crisp on the outside, soft + fluffy on the inside, freezable, + husband approved! Gluten-free, grain-free, dairy-free, refined-sugar free, and super easy to make. All you need is your waffle maker.

Adding all these ingredients together not only gives you your waffle breakfast you love, but it is all free from processed ingredients most often found when you head out to the local diner for your Sunday waffle breakfast.

This recipe not only gives you opportunity to make your own, but you can get the whole family involved. Plus you give your kids the opportunity to appreciate quality ingredients more.

Some key nutrients: Adding good quality protein to the mix, not only gives us the essential amino acids that our bodies need to support healthy muscle tissue, growth and recovery but it is also imperative for the enzymatic reactions in the body. Protein also keeps us feeling fuller for longer as it stimulates our satiety and we feel fuller for longer.

Macadamia nuts rich in nutrients and beneficial plant compounds, adding some good much needed healthy fats to your lifestyle is key. High in your monounsaturated fats, we give our bodies the opportunity to lower bad cholesterol levels. Macadamia nuts are also a lower carb, sugar nut with moderate fiber. As we know fiber is great for keeping our gut healthy. The soluble fiber within macadamia nuts, act as a prebiotic, therefore it feeds our friendly gut bacteria.



3 Eggs

1/2 Cup coconut milk

5 Tbsp coconut oil

3 Tbsp Monk Fruit Syrup

1 Serv Nuzest Clean Lean Protein Vanilla

1 Tbsp runny macadamia nut butter

1 Tsp vanilla extract

1 Cup of almond flour

1/4 Cup of coconut flour

1/4 Cup tapioca flour

1/2 Tsp Baking soda

1 Tsp Baking powder (gluten-free version)

Pinch of salt INSTRUCTIONS

In a mixing bowl or large measuring cup, combine all the dry ingredients

In another bowl, whisk together the eggs coconut milk, monk fruit syrup, coconut oil and vanilla, then pour this mixture into the dry ingredients and mix by hand until well combined.

Optional If separating the eggs, beat the egg whites on high speed with an electric hand mixer until stiff peaks form, then fold egg whites into batter to combine. (But you don’t need to separate the eggs)

Heat your waffle iron and brush it well with coconut oil.

Pour batter into the center of iron, gently spreading just a bit before closing. Allow to cook the waffles according to your waffle iron’s instructions.

This recipe will make about 4-6 servings but may vary depending on your iron.

Serve with toppings the following toppings: Crushed pistachio nuts, toasted coconut crunch from @cocobynuco

For the layers of filling in between the waffles, I made the following:

Strawberry filling

1/2 Cup coconut yoghurt

2 Tbsp of Nuzest Kids Good Stuff Strawberry

1 Tbsp Monk Fruit Syrup

Nut butter filling

1/3 Cup runny macadamia nut butter

1 Tbsp Nuzest Kids Good Stuff Vanilla Caramel

1 Tbsp Monk Fruit Syrup
