NO BAKE “FERRERO’ INSPIRED CHEESECAKE

#Christmas is of course notoriously a time known to indulge, but don’t let this be the green light to overindulge!

You can still enjoy all the festivities and get through the Christmas period without too much impact on your health and wellness goals. Plus you can make a simple easy dessert that gives you less time in the kitchen and more time with loved one’s.

Some basic simple tips when it comes to desserts for example, aim in making something delicious, yet still full of good nutrients without the guilt factor.

.

At the end of the day, how your food is partitioned depends on how your body reacts and digests it.



Therefore less is more. Aim for basic food swaps this festive season. Instead of the full creamed refined sugar pudding try opt for a different twist. Perhaps a healthy yet delicious guilt free “Vegan Vanilla Protein packed cheesecake” A dessert that is tasty yet a SMART choice to add to the dessert table.

NO BAKE “FERRERO’ INSPIRED CHEESECAKE

INGREDIENTS:


FOR THE BASE:

.

1 Cup of Large soft medjool dates

1/4 Cup of coconut oil

1 Tablespoon of raw dark cacao powder

1 Serving of Nuzest Clean Lean Protein Chocolate

1/2 Cup of hazelnuts

2 Tablespoons of Peanut butter

1/3 Bag of @cocobynuco coconut flakes (cacao)

FOR THE “CHEESECAKE FILLING”

.

1 Cup of pre-soaked cashews

1/3 Cup of cashew nut butter

1/2 Cup of coconut cream

1 Teaspoon vanilla extract

1 Serving Nuzest Clean Lean Vanilla Protein

1 Teaspoon of Manuka Honey

1 Tablespoon of lemon juice

Pinch of Salt

1 Tablespoon of Monk fruit powder

INSTRUCTIONS:


Blend all the ingredients for the base first, until you reach a dough like consistency.

Splay it out into your greased cake tin. Cover it and pop the base in the freezer while making the filling.


Blend all the ingredients together for the filling until smooth.


Once done, you can then pour the filling on top of the base, cover it and keep in the freezer for 2-3 hours to set. Once set you can remove it and allow it to soften a bit before cutting.


Option you can make the Caramel drizzle I made by mixing the following:

DRIZZLE:

.

2 Servings of Nuzest Kids Good Stuff Caramel

1/3 Cup of cashew nut butter melted (runny)

1 Teaspoon of manuka honey

1 Large medjool date

2 Tablespoons of coconut oil

1/2 Tablespoon of cacao powder


Blend until smooth and drizzle on top of the cheesecake.
