When Spring is in the air, why not take advantage and make a delicious fresh salad. Using Arugula, fresh blackberries, cucumber, mint, tahini, wrapped in a lightly dusted cinnamon coconut wrap @cocobynuco (discount in bio).
This delicious green peppery nutrient-dense leafy greens are high in fiber and phytochemicals.
Known to be low in sugar, calories, carbohydrates, and fat. It’s high in several vital nutrients. These include:
Calcium, which is necessary for bone health, tooth health, muscle function, and nerve function.
Potassium, a mineral and an electrolyte that’s vital for heart and nerve function. It also helps the muscles contract normally. Potassium helps to reduce the negative effects of sodium, and it may be beneficial for people with high blood pressure for this reason.
Folate, a B vitamin. It helps support the production of DNA and other genetic material. It’s particularly important for women who are pregnant or planning to become pregnant.
Vitamin C, a powerful antioxidant that helps support the immune system. Also known as ascorbic acid, vitamin C is important for tissue health and the absorption of iron from food.
Vitamin K, which helps with blood coagulation. Responsible for bone metabolism, regulating blood calcium levels.
Vitamin A, the umbrella term for a group of fat-soluble retinoids. Vitamin A is a powerful antioxidant, which supports immune function, cell growth, night vision, and overall eye health. It also works to help maintain kidney, lung, and heart function.
With this salad I have added some healthy plant based fats, allowing the fat soluble vitamins to become more available when digesting.
SPRING ARUGULA BLACKBERRY MINT SALAD
Serv: 1 Pax
2 Handfuls of Arugula
1 Piece of broccoli stem finely chopped
1/2 Cup fresh blackberries
3 Mint leaves finely chopped
Cucumber finely sliced
1 Sheet of Coconut wrap
1 Tbsp tahini paste (runny)
1/2 Lemon juiced
1 Handfuls of baby spinach
1 Mint leave
1/2 Teaspoon monk fruit syrup
Salad base, you can just add it to your salad bowl, on top of the salad base you will have your wrap.
For the wrap, keep the wrap aside. Start with all the listed ingredients, blending the tahini, lemon juice, baby spinach mint leave and monk fruit syurp together until a paste consistency. Spread your wrap evenly, sprinkle some fresh blackberries onto the paste. Roll the wrap firmly and cut in half. Placing it on top of your salad. Option to make a dressing: see below
Optional you can make a Lime mint drizzle: Whisk together olive oil, lime juice, mint, salt, pepper and a touch of monk fruit syrup.
